Spidy's Special Chicken 

Alright this is a simple 15 min prep..... 30-45 min baking recipe.......

2-4 chicken breasts

1 container of riggotta cheese

1 clove of fresh garlic

1/2 - 1lb of pruschette

2-3 eggs

1 container of bread crumbs or other breading substances

- pre heat oven to 375* and butter a casserole dish........   fillet chicken breats as centered as possible....... scramble eggs in a dish big enough to dunk chicken breasts for pre-breading.  Stuff chicken breasts 1 at a time with pruschutte on the bottom & riggotta ontop  & hold shut w/ toothpicks........ dip in eggs then throughly cover in bread crumbs............... put in cassarole dish or cookie sheet and repeat for othe breasts............... bake for 20- 40 min depending on size of breasts and oven......

 

***** recommended sides******

- sliced sweet potatoes in circles w/ garlic salt (bake in oven)

- squash cassarole (sliced squash w/ @ least 3 kinds of hard cheese)

- asparagus or broccoli on cookie sheet w/ olive oil........ bake at same time as chicken

*****drinks*********

 a lighter beer ........ plum wine.......... a blush buttery chardoney or a mild cabernate savergouion

you've had the chicken fettucini already but i'll make all of it for us sometime soon..........but here's another chicken maddness recipe.

 

Spidy's Chicken Salad -

1.75 lbs of chicken breats

1/2 can of black olives

2 carrots

3 celery stalks

handful of fresh chopped chives

1/2 cucumber

1/2 red pepper

1/2 green pepper

1 diced jalepeno pepper

3 tbspns mayonasise

2 tbsnps ranch dressing

 

1) Boil the chicken in big pot until pink is all gone from center cuts and cut into 1/2 bitsize chunks (leftover water can be used for great chicken noodle soup)

2) cut all vegetables same way or smaller or bigger for personal preference

3) Mix in big bowl with chicken, vegetables, mayonaise, and ranch dressing.

4) Add dashes of lemon and pepper spice, dill spice, diced basil leaves, and salt and pepper.

5) chill in freezer or fridge (at least 1 hr) depending on time limit.  and serve over bed of lettuce.

 

****suggested sides............ rice, corn on the cob, or a pasta salad of some kind ****************
